From Soil to Health: Why Regenerative Agriculture Matters

What if supporting human health begins long before food reaches our plates?

It may begin beneath our feet.

At the 2025 Metabolic Health Day Conference, Bob Jones of The Chef’s Garden took the stage to explore a connection that is often overlooked in conversations about health: the relationship between the soil that grows our food, the nutritional quality of that food, and the health of the people who eat it.

Jones, a regenerative farmer and member of the Metabolic Terrain Institute of Health Board of Directors, brought a perspective rarely heard at a health conference—and that was precisely the point.

The Metabolic Health Day Conference brought together voices from across health, nutrition, patient advocacy and regenerative agriculture to explore how seemingly separate systems are deeply connected. Introducing Jones, conference organizers emphasized the importance of bringing farmers and healthcare professionals into the same conversation.

For Jones, the connection can be summed up simply:

“Healthy soils produce healthy plants, healthy animals, healthy people, healthy planet.”

A Farm—and a Philosophy—Built Through Generations

Farming has been part of Jones’ life from the beginning.

His family’s farm grew from a roadside stand operated by his mother into a 1,200-acre wholesale vegetable operation. But during the farm crisis of the 1980s, the family was forced to rethink nearly everything.

They started over.

Instead of focusing on large volumes and low margins, the family returned to farmers markets and roadside stands. Then an unexpected encounter changed the direction of the farm.

A chef approached them looking for something unusual: tiny zucchini with the blossoms still attached.

At first, the request didn’t make much sense to the Jones family. But she returned the next week. Soon, she introduced them to another chef, and then another.

Those relationships eventually helped The Chef’s Garden become a supplier to some of the country’s leading chefs and restaurants.

And the chefs taught the farmers something important.

They wanted flavor.

Again and again, the message was the same: produce should taste exceptional, look beautiful and last.

As the Jones family began selecting crops and changing growing practices to produce better flavor, they discovered something much bigger.

Flavor and nutrition were connected.

Looking Below the Surface

That discovery helped change the way the family thought about farming.

Instead of viewing soil simply as something that holds a plant in place while farmers provide water and nutrients, Jones began looking at soil as a living ecosystem.

Healthy soil depends on chemistry, biology and physical structure. Plants interact with bacteria, fungi and other organisms around their roots. Biodiversity matters. Keeping living roots in the ground matters. Protecting the soil from erosion matters.

That thinking led The Chef’s Garden toward regenerative agricultural practices such as cover crops, composting, increasing plant diversity, reducing soil disturbance and continually measuring soil health.

The goal isn’t simply to use fewer inputs.

It’s to create healthier soil and healthier plants so fewer interventions are necessary in the first place.

What Regeneration Means

One of the ideas Jones returned to throughout his Metabolic Health Day presentation was remarkably simple: regeneration is about supporting life.

Jones contrasted conventional approaches focused on controlling weeds, insects and fungi with regenerative agriculture’s emphasis on creating the conditions for a healthy ecosystem.

That question may sound familiar to the MTIH community:

What conditions allow a system to function at its best?

Jones sees striking parallels between agriculture and human health.

“Soil quality, soil health is a three-legged stool,” he explained, pointing to chemistry, biology and physical structure.

But he also emphasized humility. Regenerative agriculture continues to evolve as farmers learn more about the extraordinarily complex relationships among plants, soil and microorganisms.

“I didn’t know how much I didn’t know,” Jones told the audience. “But I think that’s the beginning of wisdom.”

Food Is More Than Calories

Regenerative agriculture also raises an important question:

How nutritious is the food we’re actually eating?

Two carrots can look like carrots. Two heads of kale can look like kale. Yet their nutrient profiles may not necessarily be identical.

At The Chef’s Garden, the Jones family wanted to move beyond anecdotal observations that their produce tasted better or lasted longer. So they began testing it.

The farm built its own agricultural research laboratory to examine the nutritional qualities of its crops and better understand how changes in soil and growing practices might affect the plants themselves.

For Jones, this work is part of a much larger effort to understand what truly creates nutrient-dense food.

The farm continues to test, measure, adjust and learn.

Small Foods With Big Potential

Jones also highlighted microgreens as an easy way to introduce a greater variety of plants into meals.

The Chef’s Garden’s relationship with microgreens began decades ago when a visiting chef noticed young seedlings in the greenhouse and became intrigued by them. What looked unfinished to the farmers looked like an opportunity to the chef.

Today, microgreens can add flavor, texture and variety to salads, sandwiches, bowls and other meals.

Jones also encouraged attendees to rethink parts of vegetables that often end up in the trash.

Carrot tops?

Make pesto.

That spirit of curiosity—asking what else a plant can offer—is part of the larger message.

Bringing Farmers Into the Health Conversation

Perhaps one of the most important ideas from Jones’ keynote had less to do with any individual farming technique and more to do with who needs to be part of the conversation.

Farmers attend agricultural conferences.

Healthcare professionals attend medical conferences.

Patients attend health conferences.

But the systems they are discussing aren't independent of one another.

That was one of the ideas at the heart of the Metabolic Health Day Conference: creating space for conversations that cross traditional boundaries and help us see health through a wider lens.

The choices made in a field influence the plants grown there. Those plants become part of our food supply. And food becomes part of the environment in which our bodies function every day.

Jones described the parallels between agriculture and human health as “uncanny.”

“Our two worlds just collided,” he said, “and we can help each other.”

Creating the Conditions for Health

Jones doesn’t claim that regenerative agriculture has all the answers.

In fact, his message was almost the opposite.

There is still an enormous amount to learn.

But whether we are talking about a farm, an ecosystem or human health, his keynote offered a compelling question:

Instead of simply reacting when something goes wrong, what if we focus on creating the conditions in which health can flourish?

For a farmer, that can mean protecting soil, encouraging biodiversity, nurturing microbial life and continually measuring what is happening beneath the surface.

For the broader metabolic health community, it is another reminder that health doesn’t exist in isolation.

It is influenced by interconnected systems—from our individual biology to our communities, our food system and the soil beneath our feet.

Healthy soil. Healthy plants. Healthy people. Healthy planet.

That’s a connection worth cultivating.
